Position Summary:
This position will support the Head of F&B in the smooth running of F&B range development and consistent high food quality aspects within the Resort. Supporting and implementing initiatives and quality standards in all areas of F&B range development and leading culinary team to keep high standards of food and service quality to maximize visitor experience. To assist the Head of Food & Beverage to deliver against the overall park strategy and to manage resources and ensure team development. Additional duties may be required of this position to meet the needs of the business..
 
 
 
Key Objectives:
1. Increase Sales and Profitability through competitive F&B ranges:
Drive revenue growth through developing new F&B offerings with good quality and enhancing existing products.
Implement effective pricing and seasonal promotional strategies to maintain and improve profitability.
Lead culinary team to keep high standards of consistent food quality.

2. Boost Customer Satisfaction and Loyalty:
Develop menus that guarantee customer satisfaction based on preference analysis and trend research.
Set the optimal food handling process and structure to offer high food quality to customers. 
Offer diverse menus catering to various customer needs and tastes.

3. Enhance F&B Operational Efficiency:
Establish efficient food sourcing systems and manage cost controls.
Increase productivity through operational process improvements and recipe standardization with culinary team.
Empower employees through effective team building and training programs.

4. Strengthen Brand Image:
Formulate and execute strategies to elevate brand image through F&B products and services.
Drive differentiation through embracing food trends and innovation.
Increase brand awareness and publicity through continuous marketing and promotional activities.

5. Ensure Compliance with Regulations and Laws:
Adhere to food safety and hygiene standards.
Comply with labor laws and other relevant regulations.
Follow LEGO Food Item guidelines.
 
 
Scope and Responsibilities:
1. F&B Range Development:
Drive innovation and quality in F&B offerings, collaborating with the Head of F&B to execute the department`s strategy.
Track and analyze sales data to identify trends and optimize menu offerings.
Lead the culinary team as well to consistently deliver high standards of food quality across all food outlets including Hotel. 
Set and drive yearly commercial event calendar with various food offers to drive more revenue and visitors.
Deliver exceptional guest experiences by focusing on achieving food KPI targets in your designated areas.
Ensure strict compliance with all relevant health and safety regulations and requirements.
 
2. Leadership & Culture:
LLKR standards and values within the F&B department, ensuring consistent implementation.
Motivate and coach your team, fostering a positive and professional work environment.
Empower staff to achieve their full potential through effective training and development programs.
 
3. Operational Excellence:
Manage budgets effectively to meet or exceed profit targets for your area.
Oversee back-of-house operations, including the EPOS system and reporting functions.
Maintain a dynamic work schedule, including weekends and holidays when required.
Implement strategic initiatives aligned with the company`s five-year plan.
 
Financial
Produce theoretical cost of sales reports
Ensure all business goals and results are clearly communicated to your direct reports through daily/weekly meetings and encourage two-way group dialogues.
Take full responsibility for managing and meeting assigned budget(s) 
Assist the Head of Food & Beverage in deciding the product and sales mix for the year, pricing strategy, quality standards, health and safety and hygiene policies and procedures.
Control and co-ordinate stock holding policy to ensure optimum use of working capital.  Set specific stock levels, ensuring adequate monitoring procedures are in place.
Ensure direct reports are suitably trained to manage their financial responsibilities. 
 
 
Development
Drive cooking method and skill training instilling a best practice culture amongst employees ensuring employees are accountable for culinary team’s actions.   
Research and report latest high street / industry standards to ensure the products/food offering we sell are appealing in the context of the the external marketplace.
The F&B Manager is expected to provide constant leadership, counselling, advice and feedback. They must provide an environment of openness and trust, with constant feedback and performance coaching.  
Identify training programs in order to aid own development.
 
 
People
Resolving and managing staffing issues whilst taking responsibility for welfare of the team.  
Drive the company appraisal process, ensuring all staff members receive performance feedback and related development.  This position is also expected to provide strong leadership with regards to poor performers in enforcing standards fairly and consistently.
As a People Manager, you will be expected to comply with all People Manager Policies and procedures and ensure your team follows them at all times.
Develop the team through regular performance reviews, action planning, and encouragement and on the job coaching. 
Ensure employee development initiatives are in place and that these are regularly monitored
 
 
Background and Experience:
Requires at least over 5~7 years of progressive experience in an F&B environment, especially F&B range development and leading culinary team. 
Experience in a theme park or related industry preferred.
Knowledge of computer systems including point of sale, and related inventory management systems is required.
Ability to collaborate effectively with cross-functional peers. 
Demonstrated ability to manage and motivate a large team of people. 
Knowledge of budgeting, scheduling and profit protection principles.
Strong organizational, verbal and written communication skills are required. 
Language: Proficiency in verbal and written English (Merlin and LEGO).


Education:
A relevant bachelor’s degree / at least four years Management experience preferred. 
 
Other Requirements:
Maintaining confidentiality within the organization and protect any information that is classified as confidential. 
Maintaining honesty and integrity with colleagues and guests
Must be willing to work flexible hours, including evenings and weekends to support Resort operations.
Requires a valid driver’s license and passport.  
Must be willing to travel locally and regionally to conduct business, and occasional travel within Korea.
           

Health & Safety
Managers are responsible for all aspects of Health, Safety & Security within their team. In particular, they must ensure that risk assessments have been carried out, that safe working procedures are in place for all work activities and that all employees in their teams are aware of the Company Health, Safety and Security Policy and their obligations under it. They must ensure that safe working practices are monitored and that risk assessments and procedures are reviewed regularly. Where incidents do occur, they must ensure that they are investigated appropriately and that where necessary, corrective action is taken to ensure that such incidents are not repeated.
