Responsibilities
Main Duties and Responsibilities:
● Manage overall laboratory operations
● Conduct a HACCP risk analysis microbiological test
● Perform self-quality inspection of RTE food and register using the Lims system (MFDS)
● Conduct rapid inspection using PCR equipment
● Conduct environmental tests using Rodac plate, ATP, Listeria Swap, etc
● Document results for microbial testing
● Manage and record of reagent supply and demand
● Establish inspection plan according to the purpose of microbial inspection
● Arrange and prepare microbiological sampling; review results and conduct investigations If necessary
● Clerical works includes but not limited to, word processing, quality assurance report preparation and arrange
food samples to external accredited laboratories for testing and follow up
● Receive external audits related to laboratory work
● Understand QA work and mutually support QA team work
● Co-ordinate with Production / Operations team for both internal / external (airline requests) food sampling
● Establish monthly microbiological sampling plan ( Food, Hand/ Equipment/ Environmental SWAP) and
Conduct follow up tests and investigations when necessary
● Quarterly review of sampling size to meet business needs, with QA Supervisor / Manager
● Conduct calibration / verifications on OPS / Production tools (IR guns, temperature probes, scales, salinity meters etc.)
● Determine and perform tests needed for analysis and report
● Record tests, analyse and results reporting
● Discuss and respond to any questions regarding results
● Organize and store samples in accordance with all safety and other requirements, to ensure the safety of personnel
and integrity of sample
● Clean and maintain lab equipment, including recalibration of equipment
● Maintain equipment records and other daily work-logs
● Stay current on technical and scientific advances in the field
Qualifications
● Consistent, objective and honest attitude in all communication and handling of food safety, service quality and
hygiene issues versus Gate Gourmet and external parties.
● Act quickly and positively to all sensible request for advice and assistance in quality control and hygiene issues
from the operation
● Willing to perform shift
● Attention to detail and good organizational skills
● Understanding of electronic and computerized equipment in laboratories
● Able to follow instructions and strictly follow procedures
Education:
● Bachelor of Science in Microbiology and Food Science (Related Sector)
Work Experience:
● More than 3 years of experience in the same industry
Technical Skills: (Certification, Licenses and Registration)
● Proficient in Microsoft office Application
Language / Communication Skills:
● Fluent in Korean and a good command of English is prefered
● Attention to detail and good organizational skills
● Good communication and teamwork skills
